Italian Tomato Cucumber Onion Salad Recipe

Fresh and light, this tomato cucumber onion salad with celery is the perfect summer salad. Serve with crusty bread to soak up the juices!

Ingredients

  • 2 lbs tomatoes about 4 juicy, ripe tomatoes
  • 1 small cucumber
  • 2 stalks celery with their leaves choose tender, inner stalks
  • ¼ red onion thinly sliced
  • ¼ cup olive oil
  • ½ tsp salt
  • 1 tsp dry oregano
  • 3-4 fresh basil leaves

Instructions

  • Wash and slice the tomatoes; cucumber; celery and onion.
  • Place all ingredients in a large salad bowl.
  • Add olive oil; salt; oregano and basil leaves.
  • Toss to coat all ingredients with olive oil. Taste and adjust seasoning, if needed.
  • Let the salad sit for a few minutes to allow the tomatoes to marinate. Serve at room temperature.

Notes

Substitutions and Variations:
-Choose juicy, ripe tomatoes such as heirloom; beefsteak or even cherry tomatoes.
-Add olives and/or capers to this salad.
-Fresh parsley or mint may also be added.
-If you're not a fan of salad with onions, simply omit them or replace them with chives or green onions.
To serve:
-Enjoy as a main dish along with fresh bread. Round out the meal with a few olives and cheese.
-Serve as a side dish along with grilled meat or fish.
-For the best flavor, serve this tomato salad at room temperature.
