In a large mixing bowl combine yeast, flour, sugar and salt.
In a medium sized sauce pan, warm milk, but do not bring to a boil. Stir in the butter until melted. Remove from heat and whisk in the eggs and vanilla.
Pour the wet ingredients over the dry ingredients and use a wooden spoon to stir until combined.
Cover with a cloth and let rise about 45 minutes to an hour. The batter will be thick and bubbly.
Preheat waffle iron. Bake for about 2-3 minutes until golden. Serve hot with maple syrup.
Notes
If not serving immediately, place waffles on a wire rack to cool.
Store extra waffles in the refrigerator or freezer in a well sealed freezer bag.
To serve frozen waffles, pop them into your toaster to defrost.
