Frank's Rice with Peas and Ham

Ingredients

  • 2 cups white rice, uncooked
  • 1 tablespoon olive oil
  • 1 white onion, diced
  • 1/2 package frozen peas, 500g
  • salt and pepper to taste
  • 2 eggs, beaten
  • 1 cup smoked ham, cubed
  • 1 cup cilantro, chopped

Instructions

  • In a medium sized sauce pan, bring 4 cups of water to a boil, add salt and rice. Lower to a simmer and cook, covered, until the water is absorbed, about 20 minutes.
  • Meanwhile, in a separate sauce pan, heat the olive oil and add the onion. Sauté until the onion is translucent. 
  • Add the frozen peas and about 1/4 cup of water. Add salt and pepper and cook, covered, on low heat until the peas are tender, about 10 minutes. When the peas are cooked, increase temperature and stir in the beaten eggs. Stir until the eggs are cooked.
  • To assemble the dish, spoon the rice onto a large serving platter. Cover with the peas/egg mixture. Evenly spread the cubed ham over the peas. Top with the cilantro and serve. This dish may be served warm or at room temperature.
