Preheat oven to 400 degrees F and line a baking sheet with parchment paper for easy cleanup.
Pat dry the salmon fillets and place on the baking sheet.
Prepare the breadcrumbs: remove the crusts from day old bread and tear into small pieces either by hand or much easier with a food processor.In a pinch, use any bread (including sliced bread) you have on hand.
In a bowl, toss together the breadcrumbs; minced garlic; lemon zest; a pinch of salt and pepper (as much as desired).
Stir in the olive oil until the mixture is completely coated in oil.
Sprinkle salt and pepper on each salmon fillet.
Evenly distribute the breadcrumb mixture on each fillet, pressing down on the salmon.
Bake for 12-15 minutes until the fish flakes easily with a fork. You may broil the fish for 1 minute at the end of cooking for extra crispy crumbs. Serve immediately with lemon wedges.

Substitutions and Variations-In a pinch, substitute panko for the fresh breadcrumbs. -Try different herbs such as thyme or dill. -The olive oil may be replaced by melted butter. -If using wild caught salmon, reduce the cooking time.
