Begin by soaking black beans overnight or for at least 6 hours. Drain, rinse, place in a large pot and cover with at least 2 inches of water. Boil for approximately 1 1/2 hours or until tender. Drain beans, reserving the cooking water for another use, and place in a large mixing bowl. Mash the beans with a potato masher, but not until completely puréed. Allow to cool.
Heat oil in a large pan over medium high heat. Add carrot, zucchini, onion and garlic and sauté for 5-7 minutes. Add the vegetables to the bowl with the beans.
Prepare a baking sheet with parchment paper greased with olive oil. Add the remaining ingredients to the bean mixture and combine well, using your hands.
Divide the mixture into 8 and shape into patties. Place on prepared baking sheet and refrigerate for 20-30 minutes until they are firm. Meanwhile, preheat your oven to 400°F.
Bake for 10-12 minutes on each side until browned. Serve immediately with your favorite toppings.
