Black Bean Burgers

Ingredients

  • 1 teaspoon olive oil
  • 1 carrot grated
  • 1 small zucchini grated
  • 1 onion diced
  • 1 garlic clove minced
  • 2 cups dried black beans soaked overnight
  • 1 cup bread crumbs
  • 1 egg
  • 1 1/2 teaspoons cumin optional
  • 1/2 teaspoon turmeric optional
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon onion powder
  • 1/2 cup chopped cilantro or parsley

Instructions

  • Begin by soaking black beans overnight or for at least 6 hours.  Drain, rinse, place in a large pot and cover with at least 2 inches of water. Boil for approximately 1 1/2 hours or until tender.  Drain beans, reserving the cooking water for another use, and place in a large mixing bowl. Mash the beans with a potato masher, but not until completely puréed. Allow to cool. 
    Black Bean Burgers
  • Heat oil in a large pan over medium high heat. Add carrot, zucchini, onion and garlic and sauté for 5-7 minutes. Add the vegetables to the bowl with the beans. 
  • Prepare a baking sheet with parchment paper greased with olive oil. Add the remaining ingredients to the bean mixture and combine well, using your hands. 
  • Divide the mixture into 8 and shape into patties. Place on prepared baking sheet and refrigerate for 20-30 minutes until they are firm. Meanwhile, preheat your oven to 400°F.

  • Bake for 10-12 minutes on each side until browned. Serve immediately with your favorite toppings.
